Gluten Free Cinnamon Pecan Pancakes with Caramelized Bananas


We have guests staying with us who can't eat any gluten and this morning I whipped up these pancakes which were surprisingly (to me!) delicious! Our guest said they were "Heaven! The best I've ever had!" If you are gluten free and you come to stay at our Auburn NY Finger Lakes bed and breakfast you might want to request these when you book your stay with us! And just in case you won't be coming, I'll share the recipe :)

10 Fitch Gluten Free Cinnamon Pecan Pancakes with Caramelized Bananas

makes 12 4-5 inch pancakes

PANCAKES:
dry ingredients-
2 Cups Arrowhead Mills gluten free all purpose baking mix (not pancake mix)
1/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
2-3 teaspoons ground cinnamon
wet ingredients-
2 large eggs
1 1/4 cup milk
1 Tablespoon lemon juice
1 teaspoon vanilla
1/4 vegetable oil

CARAMELIZED BANANAS:
1 stick of butter
3 heaping tablespoons brown sugar
4 large ripe but firm bananas, sliced 1/2 inch thick

DIRECTIONS:
In medium saucepan combine sugar and butter. Bring to boil stirring constantly over medium heat. Reduce heat to simmer add bananas, gently stir until bananas are coated with caramel then turn heat down to warm.

2 Cups chopped, toasted, pecans - 1 cup to add to pancakes and 1 cup to sprinkle over top before serving
to toast place chopped pecans in glass pie plate with a pat of butter and microwave on high 1 minute. Stir and continue to microwave for 30 seconds, repeat until pecans are crispy and toasted.

In medium bowl whisk together dry ingredients. In small bowl, whisk together wet ingredients. Pour wet onto dry ingredients and whisk until smooth.

Lightly oil griddle and heat to 350 degrees. Griddle is ready when drop of water sizzles and evaporates when dropped onto surface. Pour approximately 1/4 cup of batter onto griddle for each pancake. Sprinkle a handful of the toasted pecans on top of pancakes. Cook about 3 minutes and flip pancake when edges look dry and bubbles appear on surface and begin popping. Cook an additional 1-1 1/2 minutes. Serve immediately: Place 2-3 pancakes on plate and spoon bananas and caramel over top, sprinkle with a little powdered sugar and pecans.

Moro's Table, Auburn NY, One of America's Best Wine Counrty Restaurants


In a recent article written by Bruce Schoenfeld for "Travel & Leisure" Moro's Table in Auburn NY was named one of America's Best Wine Country Restaurants!

Moro's Table is located in downtown Auburn on East Genesee Street, less than 1 mile from 10 Fitch. Ed Moro, former Executive Chef at Mirbeau Inn & Spa, and his wife Elizabeth, have completely transformed the interior of what was formerly Bistro One, into a casual & cozy but elegant dining atmosphere.

On the menu you'll find appetizers, a selection of fresh sushi, raw oysters, salads and 10 entrees featuring steak, chicken, seafood, and lamb. Entrees can be ordered in an appetizer size as well as the regular size portion. Moro's offers a full dessert menu, French-press coffee and an extensive wine list with many Finger Lakes wine options.

So, if you come for a stay with us at our Auburn NY Finger Lakes Bed and Breakfast be sure and plan to dine at Moro's Table during stay.

Suzanne Fine Regional Cusine, Lodi NY, Gem of a Restaurant

It is unfortunate that we only just experienced this true gem of a restaurant for the first time two weeks ago. I had heard of Suzanne when I was gathering information for our new website last year but because it is located an hour away in Lodi when we had opportunity to go out to dinner we usually chose someplace closer to the inn. Then last month we had two different couples who stayed with us who dined at Suzanne during their stay and came back raving about it so, we decided that it was time to take a drive to Lodi and see for ourselves.

Now, why I said it was unfortunate that we didn't go sooner is not only because we delayed a fine dining experience but also because Suzanne is only open seasonally and will be closing on December 19th and will not reopen until the end of March 2011. In November and December, they are open Friday through Sunday and will be closed Thanksgiving week. But if you are coming to the Finger Lakes and will be staying at 10 Fitch during this time I highly recommend that you make the trip to Suzanne's for dinner.

We were at peak fall foliage colors when we drove there and the drive was lovely even though the sky was dark and threatening. The restaurant itself is a large, charming farmhouse with big front porch that overlooks Seneca lake. I took some photos of the restaurant and our meal but blogger is having some "issues" and will not let me post the photos.

But, we did have a very nice meal at Suzanne's. Bob & Beth Stack have done an amazing job with this establishment. She is the chef and Bob helps her in the kitchen. The wait staff is young but eager and capable. The atmosphere was relaxing and beautiful from the fireplace to the view out the window to the fresh rose petal on each napkin.

My husband ordered the potato leek soup and I ordered the crab cake for appetizer. Both we delicious and beautifully presented. I then enjoyed the pork tenderloin special with mushroom sauce, snap peas and potatoes gratin while Rodney savored the filet with whipped potatoes and summer squash. We even saved room for dessert, which we never do, and each ordered something different. His was chocolate mine was a filled pastry of sorts. I had a glass of wine with dinner, Rondey had ice tea and we both enjoyed coffee with dessert. All was delicious and our bill including the tip was about $150.

When visiting the Finger Lakes area, be sure to make reservations early at our Auburn NY Bed and Breakfast, 10 Fitch, a Luxurious, Romantic Inn and for a real treat plan to do dinner at Suzanne's one evening of your stay!
